I don’t know the history on Cincinnati Style Chili, but it’s one of those things that you take for granted when you’re from southern Ohio. My dad loved whipping us up some chili over spaghetti when we were kids. It was a special treat to me. I didn’t realize until my 20s that most people didn’t enjoy chili over spaghetti.
*Gasp*
I was obviously an Ohio girl. I’d never even heard of Skyline Chili at that point!
Cincinnati Style Chili has overflowed into my married life as well. My husband (a Pennsylvania through and through) loves it. But then again, Pennsylvanian’s put french fries on sandwiches. So, whatever. It’s good!
Cincinnati Style Chili Recipe
Ingredients
- Chili (we use leftovers from my Crock Pot Chili)
- Spaghetti
Directions
- Prepare chili as normal
- Prepare spaghetti or desired noodles
- Serve chili over spaghetti in place of typical pasta sauce
- Garnish with cheese. (that’s a garnish right?)

March 21, 2016 at 9:19 pmAh, Cincinnati style chili! I grew up in Virginia where people didn’t eat chili and spaghetti together. Hubs grew up in way way southern Ohio {Chesapeake} and I don’t think they did there either. Then we moved to Columbus, where there are Skyline’s, and I found out about the “three-way”… spaghetti, chili and cheese… and I wondered where it had been all my life. I have never actually eaten it at Skyline but I LOVE Cincinnati chili!
