Cheap Oven Baked Zucchini Fries Recipe

Baked Zucchini

On our recent visit to Jr’s General Store in Bainbridge Ohio, I picked up some fresh produce. I love buying what’s in season and attempting trying make something decent. This time I tried to make zucchini fries.

I don’t keep a lot of vegetable oil on hand, so I had to do an oven baked version, but they still had a good crunch to them. I cleaned my plate 😉

Here’s what I did:

zuchinni

Rinse in cool water, pat dry.

 

Trim off ends.

 

Slice into fry-size bits.

Set aside.

 

Whisk 2 large eggs.

 

Prepare breadcrumbs to taste. I like to use stuffing mix put through a food processor.

 

Coat zucchini slices on eggs.

Dredge in breadcrumb mixture.

 

Bake at 375 for 30 minutes or longer for extra crispy.

 

Serve as is or with ranch dipping sauce.
