Cheap Oven Baked Zucchini Fries Recipe

Baked Zucchini

On our recent visit to Jr’s General Store in Bainbridge Ohio, I picked up some fresh produce. I love buying what’s in season and attempting trying make something decent. This time I tried to make zucchini fries.

I don’t keep a lot of vegetable oil on hand, so I had to do an oven baked version, but they still had a good crunch to them. I cleaned my plate 😉

Here’s what I did:


Rinse in cool water, pat dry.


Trim off ends.


Slice into fry-size bits.

Set aside.


Whisk 2 large eggs.


Prepare breadcrumbs to taste. I like to use stuffing mix put through a food processor.


Coat zucchini slices on eggs.

Dredge in breadcrumb mixture.


Bake at 375 for 30 minutes or longer for extra crispy.


Serve as is or with ranch dipping sauce.

oven baked zuchinni fries recipe All in all, it came out pretty good. I wasn’t expecting much. I’ve never made oven baked zucchini fries before, but experimenting can be fun and tasty too! Plus, they’re cheap this time of year. I got mine 3 for $1!
